Oatmeal and Dried Fruit Cookies
This is our favorite cookie recipe—a local-newspaper contest winning cookie from Cathy Reilly. It is quick and easy to make, and you can use any dried fruit you like (are chocolate chips a dried fruit?). Our current dried fruit of choice is cherry-infused cranberries.
Ingredients
1 1/2 cups flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. cinnamon
1 cup (2 sticks) butter, softened
3/4 cup white sugar
1 1/4 cups dark brown sugar
2 tsp. vanilla extract
2 eggs, room temperature
3 cups old fashioned oats
1 cup dried fruit
Directions
Whisk together the dry ingredients (flour, salt, baking powder, and cinnamon) and set aside.
Cream together the softened butter and sugars. Mix in the eggs, one at a time. Mix in the vanilla extract. Mix in the oats. Mix in the combined dry ingredients. Mix in the dried fruit.
Refrigerate for at least 2 hours to firm up the mixture. We usually form the cookie dough into small disks and place them onto a parchment-lined sheet pan to chill.
Bake for about 12 minutes at 350 degrees.
